Hawaiian Pineapple Carrot Cream Cake

Ingredients:
- 2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 3 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups grated carrots
- 1 cup crushed pineapple (drained)
- 1/2 cup shredded coconut (optional)
- 1/2 cup walnuts or pecans (optional)
For Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 4 tbsp butter (softened)
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1 tbsp pineapple juice (optional)
Directions:
- Preheat oven to 350°F (175°C) and grease/flour your baking pan.
- Mix the dry ingredients.
- Mix the wet ingredients and combine with the dry mixture.
- Fold in grated carrots, pineapple, coconut, and nuts.
- Bake at 350°F for 35-40 mins.
- Make the creamy frosting and spread over cooled cake.
- Garnish with coconut, nuts, or cinnamon.
