Hawaiian Pineapple Carrot Cream Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1 cup crushed pineapple (drained)
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup walnuts or pecans (optional)

For Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • 4 tbsp butter (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp pineapple juice (optional)

Directions:

  1. Preheat oven to 350°F (175°C) and grease/flour your baking pan.
  2. Mix the dry ingredients.
  3. Mix the wet ingredients and combine with the dry mixture.
  4. Fold in grated carrots, pineapple, coconut, and nuts.
  5. Bake at 350°F for 35-40 mins.
  6. Make the creamy frosting and spread over cooled cake.
  7. Garnish with coconut, nuts, or cinnamon.
