Ingredients:
For the Cake:
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup sour cream
- ¼ cup fresh lemon juice
- Zest of 2 lemons
- 1 tsp vanilla extract
For the Lemon Glaze:
- 1 ½ cups powdered sugar
- ¼ cup fresh lemon juice
- Zest of 1 lemon
For Garnish (optional):
- Thin lemon slices
- Fresh mint leaves
Directions:
- Prep the Oven & Pan: Preheat to 350°F (175°C). Grease and flour a 10-inch Bundt pan.
- Mix Dry Ingredients: Whisk flour, baking powder, baking soda, and salt. Set aside.
- Cream Butter & Sugar: Beat butter and sugar until light and fluffy (3-4 minutes).
- Add Eggs & Flavor: Add eggs one at a time, then mix in vanilla extract and lemon zest.
- Combine Ingredients: Gradually add dry ingredients alternately with sour cream and lemon juice. Mix until just combined.
- Bake: Pour batter into Bundt pan and bake for 45-55 minutes, or until a toothpick comes out clean.
- Make the Lemon Glaze: Whisk powdered sugar, lemon juice, and lemon zest until smooth.
- Cool & Glaze: Let the cake cool for 10-15 minutes, then invert and cool completely. Drizzle with glaze and garnish with lemon slices and mint leaves.
