Caramel Pecan Carrot Cake

This rich, moist cake combines the best of flavors—sweet carrots, crunchy pecans, tropical pineapple, and a luscious caramel drizzle.Perfect for any occasion!

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1½ tsp ground cinnamon
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 cups grated carrots
  • 1 cup chopped pecans
  • 1 cup crushed pineapple, drained
  • ½ cup shredded coconut (optional)
  • 1 cup caramel sauce

Directions:

  1. Preheat oven to 350°F (175°C) and grease 3 cake pans.
  2. Mix the dry ingredients together.
  3. Beat sugars and oil in a separate bowl, adding eggs and vanilla.
  4. Gradually combine the dry mix with the wet ingredients.
  5. Fold in carrots, pecans, pineapple, and coconut (if using).
  6. Bake for 25-30 minutes until a toothpick comes out clean.
  7. Cool completely, then frost with cream cheese frosting and drizzle with caramel sauce.
