Caramel Pecan Carrot Cake

Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1½ tsp ground cinnamon
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 cups grated carrots
- 1 cup chopped pecans
- 1 cup crushed pineapple, drained
- ½ cup shredded coconut (optional)
- 1 cup caramel sauce
Directions:
- Preheat oven to 350°F (175°C) and grease 3 cake pans.
- Mix the dry ingredients together.
- Beat sugars and oil in a separate bowl, adding eggs and vanilla.
- Gradually combine the dry mix with the wet ingredients.
- Fold in carrots, pecans, pineapple, and coconut (if using).
