Baked Cod Recipe with Lemon and Garlic

Ingredients:

  • 4 cod fillets (about 6 oz each)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
  2. Make the Garlic Lemon Mixture: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, paprika, thyme, salt, and pepper.
  3. Prepare the Cod: Place the cod fillets in the prepared baking dish. Drizzle the garlic lemon mixture over the fillets, making sure they’re well coated.
  4. Bake the Cod: Bake the cod fillets in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Garnish and Serve: Garnish the baked cod with fresh parsley and serve with lemon wedges on the side. Pair it with steamed vegetables, rice, or a light salad for a complete meal.

  • Add Veggies: You can add thinly sliced vegetables like zucchini or cherry tomatoes to the baking dish for a one-pan meal.
  • Check Doneness: Cod is ready when it reaches an internal temperature of 145°F (63°C).
