Hawaiian Pineapple Cake
Looking for a tropical twist to satisfy your sweet tooth? Try this Hawaiian Pineapple Cake! It’s super easy to make and deliciously moist with coconut, walnuts, and a creamy frosting. Perfect for any occasion!
Ingredients:
- For the cake:
– 2 cups flour
– 1¾ cup sugar
– 2 tsp baking soda
– 2 eggs
– 1 x 20 oz/570 g canned crushed pineapple (don’t drain!)
– 1 cup sweetened coconut flakes
– 1 cup chopped walnuts - For the frosting:
– 8 oz/225 g soft cream cheese
– 1 cup (115 g) unsalted butter, softened
– 1 cup powdered sugar
– 2 tsp vanilla extract
– A pinch of salt
Directions:
- Preheat your oven to 180°C/350°F/Gas 4 and grease a 9×13 inch baking tray.
- Mix flour, sugar, baking soda, eggs, pineapple (with juice), coconut, and walnuts in a large bowl until well combined.
- Pour the batter into the greased tray and bake for 45 minutes or until cooked through.
- Let the cake cool completely in the pan.
- For the frosting, beat the cream cheese until smooth, then add butter, powdered sugar, vanilla, and salt, blending until creamy.
- Spread the frosting over the cooled cake and sprinkle with chopped walnuts.
- Cut into 24 servings and enjoy!
