Hawaiian Pineapple Cake

Ingredients:

  • For the cake:
    – 2 cups flour
    – 1¾ cup sugar
    – 2 tsp baking soda
    – 2 eggs
    – 1 x 20 oz/570 g canned crushed pineapple (don’t drain!)
    – 1 cup sweetened coconut flakes
    – 1 cup chopped walnuts

  • For the frosting:
    – 8 oz/225 g soft cream cheese
    – 1 cup (115 g) unsalted butter, softened
    – 1 cup powdered sugar
    – 2 tsp vanilla extract
    – A pinch of salt

Directions:

  1. Preheat your oven to 180°C/350°F/Gas 4 and grease a 9×13 inch baking tray.
  2. Mix flour, sugar, baking soda, eggs, pineapple (with juice), coconut, and walnuts in a large bowl until well combined.
  3. Pour the batter into the greased tray and bake for 45 minutes or until cooked through.
  4. Let the cake cool completely in the pan.
  5. For the frosting, beat the cream cheese until smooth, then add butter, powdered sugar, vanilla, and salt, blending until creamy.
  6. Spread the frosting over the cooled cake and sprinkle with chopped walnuts.
  7. Cut into 24 servings and enjoy!
