Baked Cod Recipe with Lemon and Garlic
Ingredients:
- 4 cod fillets (about 6 oz each)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
- Make the Garlic Lemon Mixture: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, paprika, thyme, salt, and pepper.
- Prepare the Cod: Place the cod fillets in the prepared baking dish. Drizzle the garlic lemon mixture over the fillets, making sure they’re well coated.
- Bake the Cod: Bake the cod fillets in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish and Serve: Garnish the baked cod with fresh parsley and serve with lemon wedges on the side. Pair it with steamed vegetables, rice, or a light salad for a complete meal.
