Extreme Lemon Bundt Cake

Ingredients:

For the Cake:

  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup fresh lemon juice
  • Zest of 2 lemons
  • 1 tsp vanilla extract

For the Lemon Glaze:

  • 1 ½ cups powdered sugar
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon

For Garnish (optional):

  • Thin lemon slices
  • Fresh mint leaves

Directions:

  1. Prep the Oven & Pan: Preheat to 350°F (175°C). Grease and flour a 10-inch Bundt pan.
  2. Mix Dry Ingredients: Whisk flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter & Sugar: Beat butter and sugar until light and fluffy (3-4 minutes).
  4. Add Eggs & Flavor: Add eggs one at a time, then mix in vanilla extract and lemon zest.
  5. Combine Ingredients: Gradually add dry ingredients alternately with sour cream and lemon juice. Mix until just combined.
  6. Bake: Pour batter into Bundt pan and bake for 45-55 minutes, or until a toothpick comes out clean.
  7. Make the Lemon Glaze: Whisk powdered sugar, lemon juice, and lemon zest until smooth.
  8. Cool & Glaze: Let the cake cool for 10-15 minutes, then invert and cool completely. Drizzle with glaze and garnish with lemon slices and mint leaves.
