Butter Pecan Cake with Cream Cheese Icing

This Butter Pecan Cake topped with creamy, dreamy cream cheese icing will hit the spot!
Ingredients:
For the Butter Pecan Cake:
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 eggs
- 1 tsp vanilla extract
- 2 ½ cups flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup buttermilk
- 1 cup chopped pecans (toasted)
- For the Cream Cheese Icing:
- 8 oz cream cheese
- ½ cup unsalted butter
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp milk (adjust for consistency)
Directions:
- Preheat oven to 350°F (175°C). Grease and flour your cake pans.
- Cream butter & sugars until fluffy. Add eggs and vanilla.
- Mix dry ingredients and gradually add them to the wet mixture, alternating with buttermilk. Fold in pecans.
- Bake at 350°F for 25-30 minutes (35-40 minutes for 9×13 inch pan). Cool.
- Make the cream cheese icing by beating cream cheese, butter, powdered sugar, and vanilla. Adjust with milk for desired consistency.
- Frost cooled cake and garnish with more pecans if you like!
