Butter Pecan Cake with Cream Cheese Icing

Ingredients:

For the Butter Pecan Cake:

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 ½ cups flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup buttermilk
  • 1 cup chopped pecans (toasted)
  • For the Cream Cheese Icing:
  • 8 oz cream cheese
  • ½ cup unsalted butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2–3 tbsp milk (adjust for consistency)

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour your cake pans.
  2. Cream butter & sugars until fluffy. Add eggs and vanilla.
  3. Mix dry ingredients and gradually add them to the wet mixture, alternating with buttermilk. Fold in pecans.
  4. Bake at 350°F for 25-30 minutes (35-40 minutes for 9×13 inch pan). Cool.
  5. Make the cream cheese icing by beating cream cheese, butter, powdered sugar, and vanilla. Adjust with milk for desired consistency.
  6. Frost cooled cake and garnish with more pecans if you like!
